    I bought this to assist me in my first-time foray into jerky making. I can vouch for all the previous comments about the sturdiness, quality, ease, speed and effectiveness of this gun. My take is limited, though, as I have never used any other. I love the ability to make tasty meat snacks for a couple dollars a pound, instead of $20/pound or so for the chemical-laden store-bought varieties. My son and I have probably eaten 10 pounds of cureless, delicious jerky the last couple of months.
    A few things I would add to the conversation:
    1. The unit is supposed to hold 1.5 pounds of meat. I can only get about 1.3 pounds of airpocket-less meat in there. This is not a problem at all for me. Just an observation.
    2. The plunger that’s made into the trigger mechanism can be used w/o the trigger to speed things up. Just push the end and ram-rod the meat through.
    3. It is hard to imagine a higher quality unit. However, the screw that serves as the trigger pivot is showing a sheen of surface corrosion already. This is not a huge deal. When it gets to the point I can’t stand looking at it, I’ll put a stainless screw there.

    Update, 11-28-2015:
    Still using this unit and still love it. One more thing to bring up. The pusher on this unit is comprised of three pieces: a nylon, cup-shaped pusher sandwiched between two stainless discs. The 3 pcs are held together on the push rod by an acorn nut and a hex nut. It’d be best if you disassembled these after use and washed the plastic piece and the disc that contacts the meat. As tight as the tolerances are, meat juice and small meat particles still get underneath the disc. It’s a minor hassle (since you have to go and get tools out of your toolbox to do this). LEM should consider redesigning this so that 1 pc replaces the 3 pcs.

    So far it works great and makes perfect ground deer meat jerky strips. It’s heavy duty constructed; the treads on the tube are large gauge and and they make for a strong tight seal. I’ve had no problem with the unit popping apart when applying pressure to the tube when making jerky strips like the complaints of other brands. The plunger seal very well and I’ve had no problem with meat getting force around the plunger and back up into the tube like I’ve read happens in other brands.The handle unit is made of heavy duty aluminum covered with a thin layer of plastic to protect the metal and make it more comfortable to use. No skin binding on the metal.
    My only complaint is that it would have been very nice and useful to have a smaller cleaning brush also included along with the large brush to clean the small openings of the attachments.

    I wish I had purchased this LEM Jerky Cannon when I first started making jerky four years ago. Originally, I was using the red and white Nesco jerky gun; the one that everyone seems to initially buy because of low price point… Just skip it and purchase the LEM Jerky Cannon. It’s definitely worth the extra few dollars.

    COMPARE LEM JERKY CANNON VS NESCO JERKY GUN

    LEM JERKY CANNON:

    PRO’s
    1. LEM holds more meat.
    2. The LEM Flat nozzle produces a strip of jerky that is not as wide and flat as the Nesco flat nozzle, thus allowing you to have better control over how the jerky is cooked. In other words, the LEM Jerky Cannon nozzle is not as wide and thin as the Nesco flat nozzle, the cooking time is more forgiving in case you get distracted.
    3. The LEM Jerky Canon comes with a flat and round “stainless steel” nozzles, and a cleaning brush. However, I only use the flat nozzle.
    4. The LEM Jerky Canon is aluminum, a commercial quality product. Aluminum is more durable than plastic, can handle high temperature washes, and is safer for food preparation.
    5. No meat gets past the plunger
    6. Easy to clean

    1. My Nesco jerky gun came with three plastic nozzles: flat, double flat, and round. However, I only used the flat nozzle.

    1. Not constructed as well as the aluminum LEM Jerky Cannon. If it drops off the counter, the plastic will break.
    2. Meat gets past the plunger.
    3. The Nesco hold less meat, which means having to refill more frequently.

    Both the LEM Jerky Cannon and Nesco Jerky gun come with a few packets of jerky seasoning. However, this is not a reason to make a determination on which jerky maker to purchase.
